pico de gallo - the only good salsa


8 roma diced tomatoes
3/4 c petite diced onion
2 Tbsp minced jalepeno
1/3-1/2 c chopped cilantro
1 juiced lime
1 Tbsp distilled vinegar
1/8 tsp salt

dice, mince, chop, juice, and measure.  then mix.  it's really that easy.  you might need to tweak the quantities of these ingredients to your taste and based on ripeness.

This is unbelievably tasty and easy.  Perfect with nachos, black beans, quesadillas, or tacos.  The only trick is to make sure everything is diced, chopped, or minced to the appropriate size.  The tomatoes should be a small dice.  Obviously, the onion should be diced smaller followed by
the jalepeno.  If diced and minced to the appropriate size
the flavors blend well and "marinate" properly.  Super yummy!
